Gimme Info’s Perfectly Roasted Lemon Dill Carrots:


  • 10 to 12 organic carrots, scrubbed & peeled (sliced or cut to preference)
  • 3 T. organic extra virgin olive oil
  • 1 t. kosher salt
  • ½ t. fresh ground black pepper
  • 1 T. grated organic lemon peel
  • 1 T. organic dill weed
  • Juice of ½ organic lemon, reserved
  • Sprig of thyme for decoration


Preheat oven to 400 degrees. Combine and toss all ingredients but lemon juice in a large bowl. Place ingredients on a roasting pan and put in the preheated oven. Roast until golden and fork tender, about 20 to 30 mins. When finished, drizzle a tiny little bit of the lemon juice over top, according to your liking. For a truly decadent finish, add a dollop of organic butter! Enjoy!
